This is one of the most popular salads at Daquari Dicks in Puerto Vallarta!

Combine and mix well:

1/2 cup Jicama sliced into batonettes (alternate bean sprouts)

1/4 cup cilantro leaves

1/2 cup green onions, cut on the bias

1/4 cup slivered almonds

1/4 cup sesame seeds, lightly toasted

1/4 cup snow peas, lightly cooked and sliced diagonally

1 lb chicken breast, poached slowly, cooled and shredded by hand

* Batonettes:  stick shapes, longer and thinker than battons (about twice as long and thick as a match stick).  If using bean sprouts instead, blanch them by pouring boiling water over them and then dunking them in an ice bath.  Dry well. 


Combine the following in a blender:

  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp fresh grated ginger
  • 1 garlic clove
  • 3 tbsp rice vinegar

In a slow stream add:

  • 1 tbsp sesame oil
  • 1/2 cup peanut or canola oil

Taste and adjust seasoning.
