Kate’s Salad Dressing

 

Barb loves her daughter Kate’s salad dressing.   This recipe makes about 1 1/2 cups of salad dressing (enough for a week for two people, or a massive dinner party).  Best to store in Tupperware up to a week or so and serve chilled, never warm.

handful of fresh basil
1/8 cup red wine vinegar
1 tbsp balsamic vinegar
2 tbsp honey
1 1/2 tbsp dijon mustard
1 tbsp cracked black pepper
1 to 2 tsp salt
2 cloves garlic, crushed
1 cup of extra virgin olive oil

Put all ingredients, except for the olive oil, in a blender or something you can use a hand-held blender.  Blend until completely blended.  Add olive oil slowly as the ingredients above keep on blending.  Blend for two minutes more after all olive oil has been added.  Serve over greens.
